Poached Butternut

  • 1 small butternut squash
  • 1 vanilla pod
  • 300 g sugar

Method

Poached Butternut

  1. Peel and dice the butternut squash to a dice of approximately 2-3cm.
  2. Place in a pan, in which it just covers the bottom and add the split vanilla pod, the sugar, water and juice of half a lemon.
  3. Bring up to the boil and then simmer very gently for 15 minutes, being careful it doesn’t break down.
