Poached Butternut
- 1 small butternut squash
- 1 vanilla pod
- 300 g sugar
Poached Butternut
- Peel and dice the butternut squash to a dice of approximately 2-3cm.
- Place in a pan, in which it just covers the bottom and add the split vanilla pod, the sugar, water and juice of half a lemon.
- Bring up to the boil and then simmer very gently for 15 minutes, being careful it doesn’t break down.
