In Spain, liver means pig’s liver, and is cooked here in a well-seasoned sauce. Lambs are killed when they are very small and the liver is not much of a meal. The pig’s liver is the first thing to be eaten from the new pig, and so is associated with one of the big feasts of the year, Matanza. You can substitute lamb’s liver it you prefer.
