Callaloo, in Brian’s opinion, should be the national dish of Trinidad and Tobago because it has so much character and reflects the melting pot of people. It is a true Creole dish. Callaloo is the name of both this dish in Trinidad and a green leaf similar to spinach in Jamaica. Both like long, slow cooking.
