The following recipes are all otsumami, or ‘small dishes’ designed to be eaten alongside any alcoholic drink, but especially beer in the summer or hot sake in winter. They have deep savoury flavours but aren’t so hearty as to replace a meal. They could be described as a Japanese tapas or pintxos. These ones are all vegetarian, but the miso buta soboro also makes a great otsumami.

The ingredients for all these recipes are
