I adore potato salad and this is a particularly delicious version of it. The Japanese adore mayonnaise and squeeze it liberally over many dishes. Mixing it with the sesame dressing or goma-dare is a light, fresh use for it that is so moreish you’d be advised to double the amounts if you want to have any leftovers.

Ingredients

  • 1kg salad potatoes
  • 1 teaspoon butter

Method

You can use any potatoes for this, but it is especially good with a salad version like a Charlotte. Cut them into bite-sized pieces, leaving the skin on. Boil for about 7 minutes or until tender, but not falling apart. Drain well.
