This simple dish takes green beans to a whole new level with the nutty sesame dressing. It is perfect for a packed lunch.
Top and tail the green beans. Boil briskly for 2–3 minutes until softened, but make sure they still squeak when you bite them. Plunge them into ice cold water for 5 minutes to keep them vividly green and crisp. Roast the sesame seeds in a dry pan over a medium heat for 3–5 minutes. Drain the beans and pat dry with a tea towel. Dress them with the goma-dare and roasted sesame seeds.
