These little fritters are eaten throughout West Africa and the Caribbean and have a slightly different name in each area. Trinidadians call them ‘accra’ which really reminds you of their heritage. If you like falafel, you will love these. Incredibly tasty and satisfying, they are so good that during Ramadan Muslims often break their fast in the evening with them.
They use black-eyed peas which are in fact a bean. The beans are used raw in the fritters and cooked in the hot oil. You
