This is a traditional Trinidadian side dish. You cook it in a dry frying pan and then use it to scoop up soups or stews. It is an unleavened flat bread so can be whipped up in next to no time.


  • 500 g self-raising flour
  • 1 teaspoon sugar
  • 1 tablespoon


Put the flour in a large bowl with the sugar, butter (if using) and a pinch of salt. Rub in the butter, and then gradually add about half of the water. Bring everything together with your hand, adding more water bit by bit if it looks too dry. You want a firm but not sticky dough which comes together cleanly. Set the dough aside for 15 minutes to rise slightly.
