The aji, or salsa, served with Colombian food is so good you find yourself wanting to eat it straight off the spoon. Just hot enough to give you that desire to eat more and more, it’s loaded with lots of flavour as well as heat. This version is inspired by the salsa at El Rancho de Lalo. Traditionally it would probably be made in a pestle and mortar, but I find a processor quicker and easier.
