This simple chutney is a fantastic way to enjoy the flavour of summer toms all year round. It is easy to scale the recipe up or down if you want to use up a glut of tomatoes or make it to give to people. Simply use two parts sugar to one part red wine vinegar to keep the balance of sweet and sour. It can be eaten straight away or tastes delicious after it has matured slightly.
