This bread uses up those ripe bananas you always seem to have left in the bowl and is very simple to make. It goes best with coconut ice cream as a dessert but is also delicious as a snack with a cup of tea.

  • 80 g unsalted butter, softened

Method

Preheat the oven to 180°C and grease and line your loaf tin with greaseproof paper.

Cream together the butter and sugar in a large bowl until lighter in colour and fluffy. Mix in the egg, mashed bananas, sour cream, vanilla, bitters and cinnamon until smooth. Add in the flour,
