This is spicy and refreshing at any time of the day. Unlike the ginger beer the Famous Five drank, it doesn’t ferment so is great for kids. Adults can also add a hearty slug of dark rum to make it that much more grown up...

Ingredients

  • 500g fresh ginger
  • litres cold water
  • 1kg

Method

Peel the fresh ginger: the quickest way is to use the edge of a teaspoon. Grate by hand or in a food processor. Bring the water to the boil in a large pot and add the ginger and sugar. Remove from the heat once the sugar has dissolved and steep overnight.
