Ingredients

  • 500g fresh ginger
  • litres cold water
  • 1kg

Method

Peel the fresh ginger: the quickest way is to use the edge of a teaspoon. Grate by hand or in a food processor. Bring the water to the boil in a large pot and add the ginger and sugar. Remove from the heat once the sugar has dissolved and steep overnight.
