  • 1 onion, peeled
  • 1 carrot, peeled
  • ½ celery stick, trimmed

Method

Cut the vegetables into large pieces and put into a pot with the remaining ingredients. Cover generously with about 2 litres cold water. Bring to the boil, skimming off the scum, then reduce the heat and simmer for 2 hours. Strain.
