I remember someone trying to convince me that kale was the thing to use in Colcannon, which is a traditional Hallowe’en dish in Ireland. While it’s true that there’s loads of kale at this time of year — September, October — I’m not a great fan of it, and I like to serve Colcannon year round. I prefer the Savoy green cabbage, but either way, with cabbage or kale, it’s a great dish.
