This recipe is inspired by Gero, an Italian restaurant from the Fasano Group that started in São Paulo and opened branches in Rio. The restaurant brings a small slice of Italy to Rio, and this dish features the glory of a creamy risotto mixed with sweetened squash and plump prawns. You can use chicken stock to prepare this recipe, or you can roast the shells from the cleaned prawns in a saucepan with a little bit of olive oil until they turn pink, add water
