Ingredients

  • 8 thin slices of roast beef (320 g in total)
  • Sea salt and freshly ground black pepper

Method

Make the dressing. Combine the shallots, mustard and lime zest and juice in a bowl. Season with salt and pepper and stir. Slowly add the olive oil, whisking constantly to emulsify. Add the herbs and mix well.

Working on a clean chopping board, lay the roast beef slices out separately and season lightly with salt and pepper. Arrange a few rocket leaves inside each slice, drizzle with som
