Growing up in Rio, there were three classic cold sandwiches a carioca would eat for lunch: egg salad sandwich, chicken salad sandwich and tuna salad sandwich. I was almost 25 before I realised that this trio of sandwiches existed in other countries. This recipe is inspired by a sandwich I ate at Sukão in Búzios that uses tomatoes (I use cherry tomatoes), lettuce (I substituted rocket) and wholemeal bread (but feel free to use any type).
