This recipe is based on a snack that is served at Banana Da Terra, a restaurant in Paraty. These crisp little nuggets of cheese dough provide a wonderful crunch and then melt in your mouth. You can’t eat just one. Bolinha de queijo is a classic botequim food from the 1980s that disappeared from restaurant menus for a while but is increasingly, and with good reason, showing up all over Rio again.
