Arroz de forno is a classic dish in any carioca’s kitchen - there is always rice ready in the fridge, and we find many different recipes in which to use it. In Rio, most cooks prepare this dish with pre-cooked rice, but I prefer to use uncooked rice, for two reasons: first, it’s less time-consuming; second, the aroma of cooked rice is fresher and the grain is even more fluffy, fragrant and moist.
