Rolled Chicken Breast with Minas Cheese and Fresh Herbs in Marinara Sauce

Chicken and Catupiry cheese are paired all over Rio (and all inside this book too!). Chicken and Minas cheese, on the other hand, not too often. Yet Minas cheese provides a lovely texture within the rolled chicken in this recipe. There is some work and technique involved, especially when it comes to butterflying and tying the chicken. I must confess I have never mastered the butcher’s way of using kitchen string, and the two ends of the chicken breast always suffer from my poor tying skills
