Method

  1. Chop the meat into 2 cm cubes.
  2. Melt 500 g pork lard over a gentle heat, add the chopped onions, the meats and thyme leaves. Cook very gently for 5 to 6 hours, adding the white wine at regular intervals and stirring frequently (the longer and more gently the rillettes are cooked, the better they are).
