Method

  1. Peel and crush the garlic, and crush the juniper berries.
  2. In a heavy pan, caramelise the surface of the boar over high heat, add the crushed juniper berries and garlic and season. Pour in the white wine, add all of the vegetables and cook for 20 minutes, covered, on a gentle heat.
