  • Short-grain rice 300 g
  • Milk 1 L
  • Sugar 20

Method

  1. Heat the milk with 200 g of sugar and the split vanilla pod, add the rice and bitter almond extract, and cook gently for 20 minutes. Leave to cool and rest for 20 minutes.
  2. Chill and mix with a plain Chantilly cream.
  3. Make a caramel with the remaining sugar and a little water, add the butter and pouring cream and serve the rice pudding on this caramel s
