We wanted to include this recipe to make the most of ripe tomatoes at this time of the year. We recommend tasty buffalo mozzarella which is now made here in New Zealand.
This recipe is so gloriously simple, but it does require perfect ingredients. Arrange on the plate however you like and serve with crusty bread.
Slice the tomatoes and tear the mozzarella and the basil leaves into bite sized pieces.
Arrange the ingredients onto a platter and drizzle with basil dressing or olive oil. Season with salt and pepper.
