A great suggestion from our neighbour Cameron Woodstock at Flotsam and Jetsam was to put a layer of fruit mince in our Bakewell Slice instead of the jam traditionally used. Both ways are good but this Christmas version is ideal to make as a festive gift for friends.


  • 1-2 sheets (500 g) frozen sweet pastry, or sweet pastry recipe


Preheat oven to 180°C.

Grease a 20 x 30cm slice tin and line with baking paper.

Line the tin with a single layer of pastry and press to fit.

Trim the edges to remove excess pastry and prick all over with a fork. Blind
