Charlotte Drayton, who was a great baker at Ripe, shaped these little beauties for us. As well as being so cute they are wheat, gluten and dairy free.
In a large bowl whisk together the sugar and egg whites. Add cardamom and ground nuts and stir with a spoon until thick and quite firm.
Sprinkle a little rose water on your hands then roll tablespoonfuls of mixture into large walnut sized balls.</
