Work carefully with this mixture, as the toffee sets quickly and is very hot.


  • 225 g unsalted butter
  • cup (150 g) caster sugar


Grease and line a 20 x 30cm slice tray with baking paper or line a 12 hole muffin tray with paper cases, depending on the final shape you are after.

In a saucepan, combine the butter, sugar, and honey. Place over a medium heat and bring to the boil.

Continue to boil for 5-10 minutes, or until a teaspoonful of the mixture dropped into a glass of cold water forms a soft ball that
