Everyone needs an impressive layer cake recipe up their sleeve this may be the one! Our head baker - Lynn Colbert - wows us with this cake every time. It’s been a real honour working alongside Lynn over the years.

When making the caramel for the icing, the boiling sugar must reach a dark colour to get a rich caramel flavour. A pale coloured caramel will lack intensity.
