  • 4-5 medium sized beetroot, peeled and cut into 2cm chunky wedges
  • 3 cups (750 ml) orange juice</

Method

Preheat oven to 180°C.

Partially cook the beetroot by placing in a saucepan covered with water. Bring to the boil and cook for 30 minutes
