  • ½ crown pumpkin, de-seeded, cut into large 4cm thick wedges
  • 3 tbsp olive oil
  • 8-10 sprigs

Method

Preheat oven to 180°C.

Lightly oil an oven tray and spread out the pumpkin wedges. Drizzle over the olive oil, thyme, salt and pepper and toss to coat.
