By all means add other root vegetables such as kumara or parsnip. Change the ratio of cream and stock if you are after a lower calorie dish.


  • 4-5 large sized potatoes, peeled, thinly sliced lengthways

Preheat oven to 180°C. Grease a lasagne style ovenproof dish with a little butter.

In a large bowl combine the potatoes, fresh rosemary and red onion. Pour over the cream, stock, salt and pepper, mixing well to coat the potato slices. Pour the potato mixture into the baking dis
