Banana Coconut Cake

Preheat oven to 180°C.

Grease and line a 26cm spring form round tin.

Place the coconut and the first measure of milk together in a bowl. Leave to soak.

In a mixing bowl cream the butter and sugar together. Add the eggs one at a time,
