  • 90 ml vegetable oil
  • 20 g butter
  • 5 whole star anise<


In a large frying pan, heat the oil and butter over a medium heat. Add the star anise, clove, cabbage and onion. Cook for 5 minutes or until the cabbage has wilted slightly.

Add the water and grated apple. Cover and simmer for 15 minutes. Add vinegar, maple syrup and sugar. Cook for a further 5 minutes.

Just before serving, stir through the chervil and fennel (if using). Taste a
