This recipe was inspired by a request from Charles Carey – ‘The Oil Merchant’ to promote sales of his delicious lemon olive oil called Granverde Colonna. However, the recipe is equally successful made with a good-quality virgin olive oil.


  • 12 garlic cloves (preferably new season garlic), peeled
  • salt and pepper
  • 1 tbsp Dijon mustard


Put the garlic cloves in a small saucepan and cover with water. Bring to the boil and simmer for a minute or two, then strain. Put them back into fresh water with a little salt and cook until soft. Strain, and purée in a blender with the mustard and lemon juice. With the motor running, pour in the olive oil in a thin stream, as when making a dressing or mayonnaise. Empty into a bowl. (You may f
