Put the garlic cloves in a small saucepan and cover with water. Bring to the boil and simmer for a minute or two, then strain. Put them back into fresh water with a little salt and cook until soft. Strain, and purée in a blender with the mustard and lemon juice. With the motor running, pour in the olive oil in a thin stream, as when making a dressing or mayonnaise. Empty into a bowl. (You may f
