Method

Cut game into small pieces. Slice beef thinly across the grain and cut ham into small pieces. Melt butter in a saucepan and add game, ham and diced vegetables. Brown meats and vegetables, and then add stock and sliced raw beef. Add bouquet garni, salt, freshly ground black pepper and juniper berries, and simmer gently for 1 to 2 hours.
