Method

Prepare game aspic in the same way as basic meat aspic, reinforcing its flavour with ¼ pound lean chopped beef and ¼ pound lean dark meat from the particular game the aspic is to be served with - partridge, pheasant, grouse, etc. - when you add egg white and fresh herbs to clarify the stock. I always add a tablespoon or two of fine champagne to game aspic after it has been clarified to improve the flavour further.
