  • 2 cloves garlic, crushed
  • 1 Spanish onion, finely chopped
  • ¼ pint

Method

Sauté crushed garlic and finely chopped onion in com oil until they are golden but not brown. Add chopped olives and tomatoes, white wine, the juice and grated rind of 1 orange, lemon juice, Worcestershire sauce and brown sugar. Bring mixture to a boil and simmer gently for 20 to 30 minutes. Thicken slightly with flour, add salt and freshly ground black pepper, to taste, and a dash of Tabasco.
