Grate orange rind finely and rub it into the sugar with the back of a wooden spoon. Melt butter in the top of a double saucepan and stir in cornflour to make a roux. Then add the water and stir until boiling. Add orange juice to orange-flavoured sugar; pour into sauce and simmer for 2 to 3 minutes. Remove saucepan from the heat; allow to cool
