Cucumber and Red Caviar Rounds

  • 1 cucumber
  • vinegar
  • salt
  • 6 ounces cream cheese


Peel cucumber and cut into 1-inch rounds. Scoop out the centre seeds, leaving the sides and bottom to form a “basket”. Soak in a weak vinegar and salt solution for several hours in the refrigerator. Drain and dry. Whisk cream cheese with sour cream until smooth. Fill cucumber rounds with this mixture and top with red caviar.
