  • ½ pound raw potatoes
  • water
  • white wine vinegar
  • ½ pound

Method

Cut raw potatoes into matchsticks and boil them for 15 to 20 minutes in a mixture of water and white wine vinegar, three-fifths vinegar to two-fifths water. Drain and chill.

Cut chicken, ham, tongue and cheese into matchsticks, combine with potatoes, and dress with mayonnaise and whipped cream seasoned to taste with salt and freshly ground black pepper.
