  • 4 fresh herrings
  • 2 tablespoons flour
  • salt and freshly ground black pepper

Method

Clean and scale fresh herrings, taking care not to break skin underneath. Cut off heads, and wash and dry fish carefully.

Make 3 shallow incisions on sides of each fish with a sharp knife. Dip herrings in seasoned flour; brush them with olive oil and grill on a well-oiled baking sheet for 3 to 4 minutes on each side.
