Ingredients: onion; 4 slices fresh cod, about 1 inch thick; salt and freshly ground black pepper; canned clam juice or well-flavoured fish stock; salt and cayenne pepper; 1 egg yolk; ¼ pint double cream; juice of ¼ lemon; 1 tablespoon flour; ¼ pint canned clam juice or well-flavoured fish stock; 4 large peeled potatoes; 1 tablespoon butter; 4 slices grilled bacon; 2 tablespoons finely chopped parsley

Method

Marinate cod slices for at least 4 hours in Marinade 1 or 2. Place marinated cod steaks in (1) a well-buttered gratin dish with 1 tablespoon finely chopped onion and 2 to 4
