  • 4 fillets fresh haddock
  • salted water
  • sprigs of fresh parsley
  • boiled potatoes

Method

Cut fillets into manageable portions and poach them gently in simmering salted water for about 20 minutes, or until fish flakes easily with a fork. Serve on a heated serving dish, garnished with sprigs of parsley and boiled potatoes. Serve with melted butter seasoned to taste with lemon juice, salt and freshly ground black pepper.
