  • softened butter
  • salt and freshly ground black pepper
  • ¼ pint


Have whiting cleaned and skinned. Lay prepared fish in a well-buttered baking dish just large enough to hold them. Spread fish with softened butter; season to taste with salt and freshly ground black pepper, and pour over port. Cover fish with buttered paper or foil, and bake in a moderate oven (375°-M4) until fish flakes easily with a fork.
