  • 4 small live lobsters
  • boiling salted water or court-bouillon
  • olive oil
  • lettuce leaves

Method

Boil the lobsters; drain, and rub shells with a little olive oil. When cold, remove the two large claws from the body and crack them. Split each lobster in half down the middle, removing inedible parts as above. Garnish with lettuce leaves and serve with home-m
