  • 2-3 dozen oysters
  • 2 eggs, beaten
  • milk
  • salt and freshly ground


Shell oysters. Combine beaten eggs and a little milk in a bowl. Season to taste with salt and freshly ground black pepper. Dip oysters in egg mixture, then in cornmeal or crumbs, and allow to set on paper towel or foil for about 5 minutes before Cooking.
