Peel, core and chop the apples. Sprinkle them with sugar and a little lemon or orange juice, and rum or cognac, to taste. Let them stand for a few minutes, and then mix them with Batter I or II. Take up a spoonful of the mixture at a time, and fry in boiling fat until puffed and golden brown in colour. Do not make fritters too large or they will not cook through.
