  • 4 pounds rolled beef (round or rump), in 1 piece
  • ¾ pint red wine


Marinate beef overnight in red wine, lemon juice and 2 tablespoons olive oil, flavoured with garlic, salt, paprika, freshly ground black pepper, bay leaves and cloves. Drain, reserving the juices; brown meat in a heatproof casserole in the remaining olive oil. Add marinade juices. Cover casserole; c
