  • 1 rump steak (about inches thick)
  • freshly ground black pepper
  • 2-4 tablespoons softened butter
  • salt
  • olive oil
  • glazed onions
  • grilled tomatoes
  • buttered peas
  • pommes de terre duchesse
  • sprigs of watercress


Grill steak as above. Place it on a plank or wooden platter that has been oiled thoroughly with olive oil and heated in the oven. Arrange glazed onions, grilled tomatoes and buttered peas around steak, and garnish with a ring of pommes de terre duchesse. Brown under grill and garnish with fresh watercress.
