Beer Marinade

Combine beer, water, olive oil, sliced onion and carrots, and seasonings in a large mixing bowl. Place beef in this marinade and marinate in the refrigerator for 2 or 3 days, turning meat once or twice each day.

When ready to cook: remove meat from marinade and drain, reserving marinade. Heat olive oil in heatproof casserole just large enough to hold beef. Add me
